Founded in 1872 and incorporated in 1888, Manitou Springs has been something of a tourist destination since its early history. The town’s “healing springs” became widely popular in the late 1800s, attracting visitors from around the country looking to make the most of these exclusive springs. In fact, most of the local springs are still active today, and water in the area is free for all residents and guests to enjoy.

The Loop is another widely popular local spot serving guests authentic and traditional Mexican dishes such as molcajete, carne asada, and sopapillas with their own elevated twist. Crystal Park Cantina offers a modern take on Mexican cuisine with delectable dishes like sweet potato nachos, poblano chiles stuffed with garlic mashed potatoes, and portobello, spinach, and cheese burritos.

Swirl is a family-owned local favorite. Their fresh and exciting menu includes cauliflower buffalo wings, Thai coconut curry, and a mouthwatering brisket sandwich. Mo’s Diner and Lounge serves American comfort food at its best. Their menu includes classic dishes like biscuits and gravy, green chili, and some of the best milkshakes in town.

Cliff House Dining Room is another local favorite. Their elevated and captivating menu has made them the talk of the town, and with dishes like sweet potato gnocchi, sauteed scallops, and grilled Wapiti elk chop, it’s not hard to see why.

If you’re looking for an exceptional vegetarian or vegan option, you could always stop by Adam’s Mountain Cafe. Their highly rated menu includes charred cauliflower with toasted almonds and dates, Senegalese vegetables, and roasted butternut squash crepes.
